I cooked my first butternut squash tonight. It was okay but not great. I'm clueless about them so please tell me how you cook butternut squash.

That would be great Kelly! I didn't even know how to pick one out to begin with. And then I ended up cutting it in half (very hard to do) and microwaving it-half the time with plastic wrap over it. Then I mashed it up and added butter, cinnamon, sugar, and a bit of salt.
Most of the butternut squash we eat is already cubed and frozen, because it is such a pain to cut and peel. That said, I've heard a good way to cut hard to cut squashes is to prick them with a knife or fork a few times, then nuke them for a few minutes to soften them up. Then you can cut it in half much easier I think.
I haven't done anything too interesting - just what you do: cinnamon and maybe a touch of butter. Sometimes just straight up plain.
I think a lot of people make wonderful soups with butternut squash by using an immersion blender, but I have not tried that.
I made a very yummy apple and butternut squash soup last year and it was very easy (sorta time consuming because you have to peel and cut the squash though). It made a ton of it and then I ended up freezing it. Do you have an immersion blender? If so, I'll send you the recipe.

I've been looking for the frozen squash but can't find it. I guess Whole Foods would be a better place to try to find it.
